Allergen-Shield Gluten S is a highly specific sandwich enzyme-linked immunosorbent assay (ELISA) designed for the rapid and reliable determination of gliadin and prolamins from wheat, barley and rye in finished food products labeled as gluten-free. When paired with the optional Surface Swabbing Kit, the method extends beyond product testing to include environmental monitoring, allowing users to easily assess surface contamination and support robust cleaning validation procedures.
