Through conference sessions and workshops, the company explored how testing can move beyond isolated checks and become an active part of everyday monitoring, verification and decision-making.

During Plenary Session 2, Stefania Karakosta, Product Manager at ProGnosis Biotech, presented “From Food Safety Culture to Measurable Control: Rethinking Allergen, Residue and Hygiene Monitoring.” Her presentation examined one of the key challenges facing industry today, translating food safety culture into control that can be measured, verified and demonstrated in daily operations.

Bringing together allergen, residue and hygiene monitoring, the presentation highlighted the value of a more connected approach to food safety. Testing goes beyond confirming a result after an issue has occurred. Used consistently, it provides ongoing evidence of whether preventive measures and control processes are performing as intended.

This shift from principle to measurable control marks an important evolution in food safety management. Procedures establish the framework, while regular verification provides the evidence needed to assess performance, detect potential gaps earlier and act before risks escalate.

The discussion continued on the second day of the event with Marek Kurpesa’s presentation, “No Incubator, No Compromise: A New Standard for Antibiotic Screening in Milk, from Farm to Cloud in Minutes.” His session explored how faster, simplified and connected testing workflows can bring antibiotic screening closer to the point of decision across the milk production chain.

Marek Kurpesa and Justyna Liwińska also participated in workshops throughout the event, engaging directly with food safety professionals on the practical implementation of rapid testing technologies.

Together, these contributions reflected a broader shift in the role of diagnostics. Testing is increasingly becoming part of a continuous control framework, helping food safety teams understand process performance, identify risks earlier and make faster, better-informed decisions.
